About Us

At Waldhaus, our story begins long before our first sausage was served in Taiwan. It starts with Alfons Köber, born in 1939 in Thüringen, Germany, during the hardships of war. A farmer from a young age, Alfons later fled East Germany at 18 and built a new life in the West, where he became a butcher in the late 1950s. In 1964, he began crafting his signature Thüringer bratwurst—a recipe full of character, flavor, and care.

His sausages became a local favorite, selling out weekly. But beyond success at home, he dreamed of one day sharing his bratwurst abroad.

Today, that dream lives on. I’m Tim, and together with my friend and colleague Kevin, we’ve brought Alfons’s legacy to Taipei. At Waldhaus, we handcraft authentic German sausages using the very techniques my grandfather taught us—offering a taste of tradition, made with heart, for everyone to enjoy.

Whether you’re visiting our stall at Raohe Night Market, dining in, or ordering in bulk, we’re proud to continue a story that began over half a century ago, one bratwurst at a time.
