Types of Sausages: An Overview

If you think German sausage culture begins and ends with the classic Bratwurst, we’re about to blow your culinary mind.
In Germany, sausage making (Metzgerei) is a protected master craft. In fact, there are over 1,500 distinct types of sausages across the country! To make sense of it all, German butchers break sausages down into three distinct culinary master categories based on how they are prepared.

1. The Grilling & Boiling Legends: Brühwurst (Scalded Sausages)

These are the sausages most people are familiar with. The meat is minced raw, packed into casings, and then pre-scalded or lightly smoked by the butcher. They are incredibly juicy and are meant to be heated up—either grilled, pan-fried, or simmered in hot water—before eating.

Bratwurst

  • The Vibe: The ultimate undisputed kings of the grill.
  • The Flavor: Mostly pork (and sometimes veal or beef) variety of different types including favorites such as Thüringer & Nürnberger Bratwurst . Raw or brewed (scalded). Can be small and large in size and diameter.
  • How to eat it: Grill it! Dont have time to Grill? Cook it in a pan over the stove!

Münchener Weißwurst (Munich White Sausage)

  • The Vibe: A delicate, pale Bavarian breakfast tradition.
  • The Flavor: Incredibly fine veal and pork back-bacon, flavored with fresh parsley, lemon zest, mace, and cardamom.
  • How to eat it: Gently poach it in hot water. Never grill it! Locals sometimes suck the meat straight out of the casing (zuzeln) and pair it with sweet Bavarian mustard and a fresh pretzel before noon.

Bockwurst

  • The Vibe: The thick, snappy smoky giant you find at traditional German train stations and beer gardens.
  • The Flavor: Usually a blend of pork and veal seasoned with white pepper and mild paprika, then smoked over beechwood. Traditionally enjoyed alongside a heavy glass of dark Bock beer.

2. The Delicate Slice: Aufschnitt & Kochwurst (Cold Cut Sausages)

This is where German butchery gets incredibly artistic. These sausages are fully cooked by the butcher and are meant to be sliced thin and eaten completely cold on a slice of fresh sourdough bread. This is the backbone of the German Abendbrot (traditional evening bread meal).

Bierschinken (Beer Ham)

  • The Vibe: The absolute crown jewel of the German cold-cut platter.
  • What it is: Despite the name, it doesn’t contain beer (it’s just meant to be eaten with beer!). It features a silky, smooth, pale-pink pork emulsion base, studded with massive, visible chunks of premium cured ham. It’s seasoned subtly with cardamom and white pepper.

Jagdwurst (Hunter’s Sausage)

  • The Vibe: Hearty, savory, and full of texture.
  • What it is: A cooked cold cut made of lean pork and beef, mixed with bits of garlic, pepper, and sometimes whole mustard seeds or green peppercorns. It has a distinctly robust, spicy kick compared to plain bologna.

Gelbwurst (Yellow Sausage)

  • The Vibe: Incredibly mild, smooth, and a kid-favorite in Germany.
  • What it is: Named after its traditional yellow casing, this sausage is made from finely minced pork and beef blended with ice. It’s heavily spiced with lemon zest, nutmeg, and ginger, giving it a bright, fresh, non-smoky flavor.

Leberwurst (Liver Sausage)

  • The Vibe: Rich, velvety, and intensely spreadable.
  • What it is: Pre-cooked pork liver and fat blended with majoram and onions into a smooth or coarse pate-style paste. Smeared on rye bread with a crunchy pickled gherkin, it is culinary heaven.

3. The Cured & Fermented Masters: Rohwurst (Raw Sausages)

These sausages are never cooked with heat. Instead, they are cured, cold-smoked, or air-dried. They rely on beneficial bacterial fermentation to preserve the meat and develop deep, tangy, complex flavors.

Landjäger

  • The Vibe: The ultimate high-protein, rugged snack for hikers and hunters.
  • What it is: Blended beef, pork, and bacon fat pressed into a distinct square shape, heavily smoked, and air-dried. It has a firm, jerky-like texture and a smoky, garlicky punch. No refrigeration required!

Teewurst

  • The Vibe: A smoky, spreadable tea-time luxury.
  • What it is: Ratios of raw pork and bacon minced so finely that it forms a soft cream the texture is somehat similar to Leberwurst. It’s cold-smoked over beechwood for a week to mature. It tastes delightfully tangy and smoky and is spread directly onto buttered bread.
